Tuscan-born Manhattan restaurateur and cookbook author behind Le Madri, Coco Pazzo, Centolire, and Morso, credited with bringing Tuscan home cooking to New York fine dining in the late 1980s and 1990s. His signature robiola pizza — a split focaccia spread with robiola cheese and finished with white truffle oil, made famous at Le Madri — was published by Martha Stewart Living, and he demonstrated pizza dough on the show in 2000.
